Italian White Truffle Season in London – back in Autumn 2023

Each year, there is only a short window of time to celebrate Italy’s famous white truffle, and that time is now.

This rare Italian delicacy is highly coveted for its earthly fragrance and nuanced flavours. But what is so special about white truffles?

Well, these prized tubers only have a short season and, once formed, ripen in a matter of hours unlike black truffles that mature over a period of months. It is for these reasons that Il Tartufo Bianco are a rare treat.

Hunted and foraged across Italy, white truffles have become an emblem of culinary luxury and are often shaved over dishes or used to make indulgent white truffle oils.

At Il Borro Tuscan Bistro this white truffle season, from October to December, we have several limited-edition dishes available utilising this most rarefied of ingredients, they include:

  • Asparagi gratinati, uovo al tegamino e tartufo bianco – an earthy dish of gratinated asparagus, a sunny side-up egg and white truffle.
  • Carpaccio di Manzo e tartufo bianco – thinly sliced beef tenderloin, with our very own Il Borro extra-virgin olive oil and white truffle.
  • Risotto al burro, Parmigiano Reggiano e tartufo bianco – Acquerello risotto with butter, Parmigiano Reggiano, and white truffle.
  • And for an extra special treat, Pizza al tartufo bianco – with buffalo mozzarella and white truffle.
